Chewy Chocolate Bar


So this is the result of an insane supermarket trip with a poor hungry little 6yr old, the muesli aisle and a few ingredients. My Chewy Chocolate Bar will hopefully help you whip something up for those after school 'hangry' moments when kids are wanting something sweet and your not wanting to compromise on ingredients.

You will need a good food processor for this, I used my Thermomix and it came out really well.

Chewy Chocolate Bar Recipe

200g Raw Cashews

200g Pitted Dates

50g Desiccated Coconut

1 Tablespoon Cacao

Add all ingredients to you blender and blitz on high speed for 2 mins or until a smooth consistency is reached.

Line a lamington tin with either plastic wrap or baking paper (this just makes it easier to remove later).

Pour the mixture into the tin and press down until smooth and even. I find laying a sheet of baking paper on top helps to run you hands across it and smooth it all out.

Set in the fridge for 1 hour or overnight, or if in a rush 15 mins in the freezer will firm it up nicely.

Turnout onto a chopping board and cut into desired shapes, it will lend itself well to cookie cutters if your feeling inspired (I would love to see pictures, tag me on FB or insta).

I pressed some into more desiccated coconut for more texture.

These bars are lovely and chewy, and really satisfying. Unfortunately because of the nuts we can't take them to school but they have been a hit as an afternoon snack.

Store in an airtight container in the fridge (can be frozen if you need)
